From 29 June, Award-winning Cantonese restaurant Man Fu Yuan at Fraser House, a Luxury Collection Hotel, Singapore, introduces a refreshed à la carte menu by Executive Chinese Chef Aaron Tan.

The menu reflects Chef Aaron's belief in transformation rather than reinvention, preserving the discipline, depth, and artistry that define Cantonese heritage while presenting them through a contemporary lens. As the first Singaporean chef formally trained in the Manhan Quanxi (满汉全席) Imperial Banquet culinary tradition, Chef Aaron draws upon this rare lineage alongside mentorship from Northern Chinese chefs to present a more layered expression of Cantonese cuisine through refined technique, storytelling, and ingredient-driven craftsmanship.

Among the highlights are the celebratory Eight Treasures Hulu Gourd Duck inspired by imperial banquet cuisine, the intricate 168-Hour Cured Fresh Mantis Prawns with Fragrant Wine, and Steamed Yellow Croaker with Minced Iberico Pork, Water Chestnut, Mushroom, and Orange Peel.
