Delicate Jade Perch steamed with golden black garlic sauce leads into fragrant shrimp paste fried rice with giant red leg prawn, before concluding with chilled purple sweet potato purée and peach collagen; light, comforting and restorative.
Camellia offers a more indulgent progression, beginning with beetroot vegetable dumpling and crispy tiger prawn, then a velvety seafood bisque layered with fish maw and pumpkin. Crisp turbot with Thai mango and citrus notes gives way to roasted Irish duck with oriental la mian and black truffle, ending on a refreshing herbal jelly with crystal peach collagen.
