Man Fu Yuan at Frasers House, a Luxury Collection Hotel, Singapore presents a dining experience that honours the refined legacy of Cantonese cuisine while embracing contemporary expressions shaped by Executive Chinese Chef Aaron Tan’s dedication and travels.


Grounded in the discipline of traditional Cantonese culinary techniques, Chef Aaron weaves stories of heritage and modernity into each creation, crafting dishes that resonate with today's sophisticated diners.

Man Fu Yuan presents a series of showstopping signatures, where culinary theatre meets refined craftsmanship. Highlights include the Flambé Roasted Angus Beef Tomahawk with Mongolian Sauce and Spices, a dramatic tableside presentation, and the Chef Combination 2.0, a curated tasting that brings together dim sum, roast, cold, and hot kitchen signatures on a single, elegant platter.

Layered flavours unfold through the Oyster Story, while nostalgia is thoughtfully reimagined in the Oven-baked Rock Lobster with Salted Egg Yolk Sauce.

Indulge in handcrafted dim sum delights such as the Truffle Crystal Dumpling, a delicately crafted masterpiece that delights the senses with its exquisite flavours and textures. Savour the Crispy Filo Pastry Prawn with Wasabi Aioli and Tobiko, a delightful fusion of flavours that showcases the creativity of the culinary team. No dim sum feast would be complete without the classic Hong Kong Style Barbecued Meat Platter, featuring succulent cuts of meat expertly charred to perfection.

Complement the dining experience with a curated selection of premium teas, chosen to enhance the flavours of each dish and elevate the dining experience. Indulge in Man Fu Yuan’s Executive Lunch Set Menus, featuring two exquisite 5-course options that blend traditional Cantonese flavours with modern twists.

 

Willow opens with Man Fu Yuan's signature appetiser pairing of Spinach Prawn Dumpling and Siew Mai crowned with tobiko, followed by a nourishing double-boiled Sakura chicken soup enriched with wild mushrooms, cordyceps flower and conch. Delicate Jade Perch steamed with golden black garlic sauce leads into fragrant shrimp paste fried rice with giant red leg prawn, before concluding with chilled purple sweet potato purée and peach collagen; light, comforting and restorative.

Camellia offers a more indulgent progression, beginning with beetroot vegetable dumpling and crispy tiger prawn, then a velvety seafood bisque layered with fish maw and pumpkin. Crisp turbot with Thai mango and citrus notes gives way to roasted Irish duck with oriental la mian and black truffle, ending on a refreshing herbal jelly with crystal peach collagen.

Available exclusively at weekday lunch, the Willow ($78++ per person) and Camellia ($88++ per person) sets invite guests to savour and experience the hospitality of Man Fu Yuan through a contemporary Cantonese lens.

Man Fu Yuan at Frasers House, a Luxury Collection Hotel, Singapore invites you to rediscover the enduring craft of Cantonese claypot cookery through a thoughtfully curated seasonal showcase, available from 7 to 31 March 2026.


A time -honoured tradition in Cantonese gastronomy, claypot cooking holds profound importance in Cantonese cuisine, symbolising warmth and comfort. With its porous surface and even heat distribution, the claypot plays a pivotal role in enhancing the flavours and textures of the ingredients, ensuring each dish is a masterpiece of taste and aroma. Drawing inspiration from traditional Cantonese flavours and culinary techniques, Executive Chinese Chef Aaron Tan has meticulously crafted a menu that promises to delight the senses and elevate the dining experience.

The Giant Grouper Fillet with Preserved Black Bean Sauce is a study in balance; delicate, flaky flesh gently enveloped in a savoury black bean emulsion, where natural sweetness meets fermented  richness in refined harmony. The Mala Fragrant Frog Legs offers a more spirited expression, showcasing tender meat infused with aromatic heat. Fragrant Sichuan peppercorns and chilli create a layered warmth that lingers gracefully rather than overwhelms, revealing complexity with each bite.

The claypot offerings are available for lunch and dinner at Man Fu Yuan.
